But when I close and relaunch µtorrent some time later, it starts downloading again. It forms and starts to download new files even though I already have them.. Why is it doing this? Move the completed file(s), or the folder containing the file(s) downloaded, to your preferred location. Then right-click on the torrent>Advanced>Set Download Location. Then Start the µTorrent.
