Just associate .torrent files with whatever program you want (Azureus for example), and they will stop being associated with uTorrent.

As far as I know, uTorrent never associates itself with .torrent files, unless you explicitly instruct it to do so (in other words, there's nothing to disable). In General Options, there's a button "Associate with .torrent files". There's also a checkbox "Check association on startup", which if it's enabled, will cause uTorrent to ASK you at startup if you want to associate .torrent files with it (and will only do so if you say "yes").
